I’ve been a little under the weather lately, and today on day 8 of the Christmas flu that is going around, I was finally feeling up to getting fancy with breakfast again. (I had eggs and bacon for 8 days straight!) It’s been a while since I’ve had some good pancakes, so I decided that was going to go good with some bacon for breakfast, and I decided to use my favorite Paleo Pancakes recipe found here.

These pancakes are amazing as they are free of all refined sugars, dairy, grains, and gluten. These don’t have a strong flavor of banana or scrambled eggs as some paleo pancake recipes will leave you with. These are simply fluffy, sweet and delicious.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Paleo Pancakes


  • 1 tsp vanilla extract
  • 1 tsp raw honey
  • 4 egg whites
  • 2 eggs
  • ½ cup coconut milk
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ½ cup coconut flour
  • ¼ tsp baking soda
  • 1 tbsp coconut oil (for cooking)


  1. Place all ingredients minus the coconut oil into a blender and blend for 30 seconds until the batter is mixed thoroughly and no chunks remain.
  2. Heat a skillet over medium-low heat and melt a small amount of coconut oil.
  3. Scoop ¼ cup of batter and ladle into the skillet.
  4. Cook pancake for about 3 minutes on one side. You should see a nice brown color on the bottom of the pancake before flipping. When ready, flip the pancake and cook the other side for about 2 minutes. If the pancake wrinkles while flipping, cook for longer.
  5. Repeat until the batter is gone.
  6. Top with butter, and maple syrup and enjoy with a side a bacon!
