Hunter Stew

Hello! I hope everybody had a great holiday season! This is a good hearty stew recipe that I tried last week that is perfect for those cold days when you just want to stay indoors! This stew is called Hunter Stew, and it consists of a good beef and vegetable mixture with a surprise kick of an ingredient – blueberries. For what sounds like a strange combination, trust me, it’s more than delicious!

Of course with any beef, I always advise to use grass-fed beef if you can! You’ll see that just a few ingredients can turn into a very delicious and hearty meal which of course is gluten free and all-paleo!

  • 1 lb grass-fed stewing beef
  • Coconut oil for frying
  • 2 cups baby carrots sliced in half lengthwise
  • 1 large onion sliced in semi circles
  • 1 tsp Butter
  • Salt, Pepper, Oregano, Garlic powder
  • 2 handfuls fresh blueberries
  • Optional: Red wine and Worcestershire sauce


  1. In a large skillet melt the coconut oil and brown the beef with the onions on a medium simmer until the beef is cooked through and the onions are soft.
  2. Add the carrots and eyeball the seasoning to taste. Usually about 1-2 tsp of each equally will do. If using red wine and/or Worcestershire sauce, add those now, and then add water until the tops of the meat are just about covered. Cook on medium heat for 20 minutes.
  3. After 20 minutes of stewing, add the blueberries and the butter to coat. Cook for an additional 10 minutes.
  4. When the carrots are tender with a fork it’s ready! Serve and Enjoy!
