This week we made something special. This Paleo Sweet and Sour Chicken is sure to have you second guess that you didn’t order it from the chinese takeout place down the street. But this amazing paleo version of sweet and sour chicken is gluten-free, dairy-free, and contains minimally processed ingredients. You won’t find any added MSG or cancer-causing polyunsaturated fats in these!

Paleo Sweet and Sour Chicken

Ingredients:

Instructions:

  1. Prepare the sweet and sour sauce by heating a medium sized sauce pan and adding the sugar, apple cider vinegar, coconut aminos, chicken stock and ketchup.
  2. Stir the sauce mixture up and bring to a boil. Then reduce to a low heat and let simmer for later use.
  3. Beat the egg into a medium sized mixing bowl and add the chicken. Stir the chicken in the bowl to coat evenly in egg. Add the arrowroot (or cornstarch) and mix to thoroughly coat the chicken.
  4. Drizzle the oil into a large pan and heat. Add the coated chicken pieces and fry on one side over medium heat for a few minutes until the chicken begins to turn golden brown.
  5. Turn the chicken over and cook until crispy on both sides.
  6. Add the pepper and pineapple chunks to the pan. Cook for a few more minutes until the chicken is cooked through.
  7. Add the sweet and sour sauce to the pan. Cover and reduce heat to simmer for a few minutes to allow the sauce to soak into the chicken.
  8. Uncover, and serve 3-4 portions with cauliflower rice, steamed broccoli, or your favorite side. Top with sliced green onions for garnish. Enjoy!
